The Porterhouse and T-bone cuts of steak look similar to each other and come from the short loin of a cow, but contain different parts of the loin.

Although both steaks come from the same back muscle, between rib and sirloin, the Porterhouse contains more tenderloin, the most tender part of the loin, than the T-bone.

Location of Steak

The T-bone comes from the center of the short loin. The Porterhouse comes from one end of the short loin, which is larger.

Value

If these two steaks have the same price, you get a better value from the Porterhouse because it has more tender meat.

Appearance

The Porterhouse looks thicker. Porterhouses come from a tenderloin at least 1-1/4 inches across, while a T-bone can come from a tenderloin 1/2 inch across.

Cooking
