Lettuce Wraps

This easy-to-prepare meal is both refreshing and healthy. All you need are two Romaine lettuce leaves and a bean of your choice, such as black beans or kidney beans. Flatten the lettuce leaves onto a plate. Drain the beans and spoon the desired amount onto the center of the leaves. Tightly roll each leaf and pack in an air-tight container. To make the lettuce wrap more flavorful, sprinkle a little Italian dressing over the beans before rolling the lettuce.
PB & J Sandwiches

Peanut butter and jelly sandwiches are extremely quick and easy to make. Just smear on the desired amount of peanut butter and jelly (or jam) between two slices of bread. For a more wholesome sandwich, replace white bread with whole wheat. You can also purchase slices of peanut butter and jelly, which is then easily placed onto the bread.

Pita Pizza

This little pizza can quickly be prepared the night before and eaten for lunch the following day. Preheat the oven to 425 degrees Fahrenheit. Spread on the desired amount of pizza tomato sauce on a flat pita bread. Sprinkle on a dairy-free cheese of your choice. Top the pizza with slices of green pepper, olives, mushrooms or onions. Heat in the oven for about 10 minutes, or until the cheese is melted.
Fruit Salad

Chopping up your favorite fruits and combining them together in a bowl offers a tasty and refreshing lunch for work. Slice up some bananas, kiwi, strawberries, grapes and melons and combine them in an air-tight container to bring to work.
