Substitutions for Fennel Seeds
A European herb, fennel has a distinctive taste similar to that of mint. Widely used in the Mediterranean, fennel is widely popular in salads, soups and with lamb. Fennel has a strong aroma that can often lead cooks to look for another substitution. Fennel seeds are often used as an additional seasoning in a dish. Star of Anise

Having a flavor along the lines of licorice, star of anise is highly aromatic and often a suitable substitution for fennel seeds. Used mainly in fish dishes, star of anise has also been used in teas and liqueurs. Some European countries use anise seeds in confectionery items such as anise seed balls.
Cumin

Similar to parsley, cumin seeds are a great substitute for cooking with fennel seeds. More along the lines of black pepper in taste, cumin adds a spicier flavor to a dish. Grown in a more earthy type of soil, cumin is highly enriched with iron. Cumin seeds are low in sugar content and high in dietary fiber.

Dill is another good substitute for fennel seeds. Although milder in flavor, dill pairs really well with salmon and other seafood dishes. This herb is at its best when used fresh. Dill is also used in a wide variety of Italian recipes and can be used as an anti-gas agent to soothe the stomach.
Licorice Root

Similar in taste, licorice root is often a spot on replacement for fennel seeds. Consisting of the same texture and flavors, less licorice root is needed in the recipe due to it highly volatile flavors. This herb is mainly grown in the Middle East and Asia.
