St Patrick's Day Desserts for Kids
St. Patrick's Day is commonly associated with shamrocks, leprechauns, pots of gold and the color green. Many people simply add green food coloring to their desserts to make St. Patrick's Day-themed treats; however, you can get a lot more creative than that. This year, consider making St. Patrick's Day desserts that the children will love and your friends will admire. Does this Spark an idea?

Shamrock Rice Krispie Treats
-
Prepare Rice Krispie treats according to the directions on the cereal box. After the tray of Rice Krispie treats has cooled, press greased cookie cutters shaped as shamrocks into the treats and gently push them out of the cookie cutter and onto a plate or tray. To decorate them, outline each shamrock in green icing and then fill it in with green icing or frosting. You can also coat the frosting with green sprinkles.
Clover Cupcakes
-
Prepare cupcake batter from scratch or use a boxed cake mix. Next, place cupcake liners in a cupcake cooking tray and fill each liner halfway up with batter. Roll up tin foil into 2/3-inch balls and place three around each cupcake, evenly spaced and sitting between the cupcake liner and the cooking tray. This will create shamrock-shaped cupcakes. Once they are done and cooled, outline the shamrock shape with green icing and fill in the shamrock with green icing or frosting. Finally, use a toothpick to draw leaf vines in the shamrock, and place a 2-inch piece of green licorice in the base of the cupcake to resemble a stem.

St. Patrick's Day Cookie Pizza
-
Begin by evenly pressing cookie dough --- any type you like --- onto a lightly greased pizza pan. Bake the cookie, then let it cool. Cover the cookie with green icing, leaving a half-inch "crust" unfrosted, and sprinkle with St. Patrick's Day-inspired candies. Examples of appropriate candies include rainbow-shaped marshmallows, shamrock cake decorations and any type of green candy, such as jelly beans or jujubes.
Pot of Gold
-
To make the "gold," prepare a box of lemon-flavored gelatin according to the instructions on the box, pour the liquid into a rectangular cooking dish lined with plastic wrap and let it cool. The plastic wrap is there to help you remove the gelatin,so make sure there is enough overhang for you to grip. Next, cover the cooking dish with plastic wrap and place it in the refrigerator for four hours or until firm. Once firm, remove the gelatin from the cookie dish by pulling on the plastic wrap liners and cut the gelatin into half-inch cubes. Set aside. To make the pots, cut the tops off several limes and remove the fruit inside so that you only have the shells of the limes. Then cut a thin layer off the bottom of each lime to make them stand up on their own, and cover the inside bottom of each lime with a teaspoon or more of whipped cream. Fill with cubes of yellow gelatin and you have "pot of gold" desserts.
