There are, by my count, at least seven levels of fried chicken. The worst of them is good; the best, which I waited forty-four years to find, led to what can only be called an out-of-body experience. Let’s start at …
Creative Meals for Kids
While not all kids are adventurous eaters, most of them get tired of eating the same thing week after week. Solve this problem by adding a creative twist to their favorite foods, from breakfast to dinner. Your children will have their favorite familiar flavors with just enough variety to seem like a totally new dish. Add this to my Recipe Box.

Neat Joes
-
Make a batch of your favorite sloppy joe meat and set it aside to cool slightly. Thaw a loaf of frozen bread dough, or use a batch of prepared pizza dough. Cut the dough into pieces about the size of a tennis ball. Roll out the dough on a floured board until you have a rectangle that measures 4 by 8 inches. Put 2 tbsp. of sloppy joe meat in a line in the center of the rectangle. Fold the shorter ends down over the meat, then bring the longer ends up to meet in the middle, encasing the meat. Place the filled buns on a cookie sheet and bake them in a 350 degree Fahrenheit oven for about 20 minutes or until the crust is nicely browned.
Pizza Sticks
-
Lay split hot dog buns on a baking sheet in rows. Top each bun with a spoonful of marinara sauce or pizza sauce. Place three pepperoni slices on each stick, then sprinkle them with shredded mozzarella cheese. Bake the pizza sticks in a 325-degree Fahrenheit oven for about 10 minutes or until the cheese is melted and the buns are toasted.

Sandwich Rollups
-
Skip the commercial white bread slices for your next batch of sandwiches and use flour tortillas instead. Spread the tortillas with mayonnaise, mustard or cheese sauce. Layer meats, cheese slices and chopped vegetables onto the tortilla. Roll the sandwich up tightly and wrap it in aluminum foil to hold its shape in a lunchbox or in the car on the way to a soccer game.
Shish Kabob
-
Purchase a package of wooden skewers and allow your children to create their own dinner concoctions. Cut chicken breast meat or steak into cubes, along with peppers and onions. Set out whole mushrooms, cherry tomatoes and pineapple cubes. Allow your children to thread their favorite bites onto the skewers, then cook the skewers on a grill for them. Have the children skewer peach and pineapple slices along with chunks of angel food cake for a tasty dessert to go with their dinner.
Breakfast
-
Put a fast food twist on a hearty breakfast and feed your kids in the same time they spend eating a bowl of cold cereal. Scramble eggs with small cubes of red and green pepper. Cook sausage patties and break them up into bits. Layer scrambled eggs, sausage bits and shredded cheese onto flour tortillas. Fold two ends of the tortillas over the filling, then roll the other ends up to create a stuffed burrito. Eat them as is for a quick breakfast, or put them on a plate and top them with sour cream, salsa or guacamole.
