The difference between cooking an egg "over easy" and "sunny side up" is as simple as a flip. However you prefer your egg, you can master these two cooking techniques to ensure a delicious breakfast every time. Say goodbye to broken yolks, misshapen whites and overcooked eggs for good.

Perfecting Sunny Side Up

  • If you like your yolks runny and one side of your egg perfectly untouched, sunny-side-up eggs are probably your go-to breakfast order. While you can just crack your egg into the pan, wait until it looks done and then slide it onto your plate, you will probably end up with an overdone bottom and underdone top. A little supplemental cooking will go a long way to ensure a perfectly cooked egg.

    Once your egg white begins to turn opaque, spoon a little bit of your hot cooking oil over the white. Once the white is set, spoon a little oil over the yolk as well. This will expedite the cooking of the top of your egg without sacrificing the bottom, while giving your sunny-side-up egg a beautiful sheen. Alternatively, once you crack your eggs into the pan, place it into a 350-degree-Fahrenheit oven and cook for 4 minutes.

Perfecting Over Easy

  • The crux of cooking an egg over easy is usually the flip. We've all seen a chef make it look like a piece of cake: holding the skillet mid-air, a simple flick of the wrist, a perfect flip. In reality, it's often a war zone in the skillet: shredded whites, a broken yolk, a partial flip.

    When your egg whites are set, they'll appear fully opaque and solid around the edges. This is when it's time to flip. Slide the spatula slowly and carefully under the egg until the yolk is approximately in the center of the spatula. Lift your egg just a few inches into the air and quickly and assertively flip it over. Cook for 10 to 15 seconds or until desired doneness. You can gauge how liquid your yolks are by touching them lightly with your finger.

Gentle Cooking for Fried Eggs

  • Use medium heat to avoid cooking too slowly or quickly, which will lead to improperly cooked eggs. Use caution when you crack your egg into the skillet to avoid a misshapen egg and broken yolk from the get-go. Gently crack your egg on the side of the skillet and carefully release. You can also pre-release your egg into a small bowl and carefully slide it into the skillet.

A Perfect Circle

  • For perfectly shaped sunny-side-up or over-easy eggs, set down a large, round cookie cutter or the metal ring of a mason jar in your skillet. Crack your egg into the mold for perfect circles.
