iPad Won't Let Me Edit the SMTP Server
The Mail app of the Apple iPad allows you to configure email accounts from any provider. If you need to add an account with a custom outgoing server address, or SMTP, to the device but aren't able to, an error on your part likely prevented you from doing so.

IPad Provider Options

When you tap the "Settings" button and then the "Mail, Contacts, Calendar" option on the iPad, you are able to select an "Add Account" option to add an email address to the iPad's inbox. If you want to input custom SMTP information, you must select "Other," as options like "Gmail" and "Hotmail" include prefilled server information you aren't able to change.
Credentials and Servers

After you have chosen the "Other" option, enter the information to add the email address to the iPad's keychain. Once you enter the incoming POP3 and outgoing SMTP server information, enter the username and password for the email account. In the majority of cases, the username is the entire email address -- including the @mailprovider.com ending -- rather than simply your screen name.

Input Errors

Failure to input any of your email account credentials exactly as they appear within your Web- or desktop-based email client causes the iPad to fail when it attempts to retrieve or send messages. A common error is to accidentally enter the POP3 incoming server as if it was the SMTP outgoing server or vice versa. If you get an SMTP error, check to make sure you haven't accidentally mixed up the server information.
Workarounds

If you are sure you've selected the "Other" option and have correctly entered all your information, it is possible that the iPad's Mail app -- and thus, its iOS operating system -- is out of date. To update iPad software, plug the device into your computer using its USB cable and click the "Yes" option when iTunes prompts you to download and install the latest operating system update.
