You can make peanut butter and jelly in fun ways by changing the type of bread, peanut butter or jelly used. Vary your peanut butter by switching between chunky or smooth. Another adaptation of the classic is to use a flour tortilla, instead of regular bread, to make peanut butter and jelly quesadillas. Spread 2 tbsp. of peanut butter and jelly over a 6-inch flour tortilla and fold it in half. Then warm each side of the tortilla in a skillet until warm. This will make approximately two quesadillas.

You'll need a box of refrigerated pie crust, which contains two rolls of pie crust, 8 oz. jar of fruit jam, 2 tbsp. of creamy peanut butter, 1 1/3 cups of powdered sugar and 1/8 cup plus 2 tsp. of water. Let the pie crust reach room temperature. Unroll the dough and use a knife to cut an 8x8 square. Cut the square into three long sections. Repeat with the second roll.
Place 2 tbsp. of jam in the center of the first half of the each slice. Poke holes in the other half of the dough. Fold the sides with the holes over the jam side. Wet the inside edges with some water, using your finger. Press the sides with a fork to seal it. Bake at 350 degrees Fahrenheit for 15 to 20 minutes. Remove from the oven and place on a wire rack to cool.
As the pastries cool, combine the peanut butter, powdered sugar and water. Drizzle the mixture over the cooled tarts and wait five minutes before serving to let the glaze harden. This will make six tarts.
