As we become healthier, poultry substitutes are more available in many different forms. You can easily find ground turkey and chicken at the local grocery store, and these meats can easily be substituted in meatloaf and other recipes for which ground beef is usually used.

While boneless, skinless chicken breasts are incredibly healthy, eating them every day can become quite boring. Cooking and roasting bone in poultry pieces is a welcome change to the usual chicken breast dinner. The bone provides additional layers of flavor and can be easily removed after the cooking process. Additionally, using poultry pieces allows you more control over portions sizes and cost.

    Roasting Whole Birds

When the occasion calls, roasting a turkey, chicken or game hen whole can provide the desired atmosphere and amount of food for the perfect evening with friends or family. Whole birds are notoriously less expensive than other forms of poultry and, depending on their size, can be easily roasted in the space of a couple hours. Keep whole birds from drying out and becoming flavorless by stuffing them with aromatics such as citrus, fresh herbs and fruit.
