Beef tongue may be prepared and seasoned in a multitude of ways, according to taste. Spices with minty or citric flavors are common in the preparation of beef tongue, including marjoram, bay leaf and salt. Fresh green chili peppers also may be added for a stronger, spicier flavored beef. Garlic and onions are also a useful way to easily season a beef tongue. For a sweeter beef tongue, a recipe may call for sugar or raisins. Salt and pepper, as always, may be added at the end of the beef-cooking process to enhance the taste and aroma of beef tongue.
