Salads as a Meal

Make a luncheon salad that's high in protein with romaine lettuce, bite-size pieces of roasted chicken, toasted almonds and 1/3 cup of shredded cheese.
A salmon pasta salad includes cooked seashell pasta, blanched green beans cut into 1-inch lengths plus canned or barbecued salmon pieces. Lemon juice and chopped, fresh dill weed with optional low-fat plain yogurt can top this seafood salad served on a bed of lettuce.

A colorful and vitamin-rich spinach salad begins with trimmed spinach leaves torn into bite-size pieces. On top of this bed of greens are strawberries, plus a tablespoon of sliced, toasted almonds or sesame seeds. Fresh blueberries can be used as the garnish.

A cool dish of tabbouleh starts with cracked wheat that is covered in boiling water and then drained. Garden vegetables, such as tomatoes, cucumbers, parsley and mint, are chopped and mixed in, along with a sprinkle of lemon juice and olive oil. This salad should be chilled at least four hours before serving. Other grain options include couscous and quinoa.

A Japanese-style abalone and kiwi fruit salad blends seafood with a dose of vitamin C. For four servings, you can cut 2 ½ oz. of canned abalone into julienned strips. One or two peeled kiwi fruit is cut into half-moon slices. Crushing some of the fruit with the back of a spoon makes a pulp, with some slices still visible. The abalone strips plus a sprinkle of light soy sauce and lemon juice top this salad.
