Bran Muffins with Carrots

Carrot Bran Muffin Recipe

In a large bowl, combine 1-1/2 cups of flour, 1 cup of wheat bran, 1/2 cup packed dark brown sugar, 2 teaspoons ground cinnamon, 1-1/2 teaspoons baking powder and 1/2 teaspoon of baking soda. Mix and then stir in 2 eggs, 3/4 cup of buttermilk, 1/2 cup of vegetable oil and 2 tablespoons of molasses. Gently fold in 1-3/4 cups of grated carrot and 1 cup of golden raisins. After greasing your muffin tins, fill them 3/4 of the way full and bake at 350 degrees for 25 to 30 minutes. Using a toothpick, test the center of a muffin for doneness; if the toothpick comes out clean, the muffins are done. Cool for five minutes before removing them from the pan. This recipe makes 12 carrot-bran muffins.
