on 12/27/2008 I read on one recipe to add just a pinch of cream of tartar right when the mixture starts to boil. This keeps the sugars from granulating. Not too much; could make the syrup bitter.

on 3/7/2006 Adding 1-2 tablespoons of butter to this recipe gives it a nice rich flavor, and combined with the addition of liquid smoke, makes it out of this world!

on 11/22/2005 You want the real stuff on your johnny cakes? Get some molasses and thin it with some sugar water and heat it up a little. Yummy when poured on them johnny cakes with a lot of butter!

on 11/22/2005 Use the recipe for syrup made with water and brown sugar. Add a teaspoon of maple flavoring, and for the authentic taste; add a couple of drops of Liquid Smoke found in the BBQ sauce or seasoning section of you supermarket. This smoky taste will replicate the old world flavor of Canadian Maple syrup found in Canada, Minnesota, Wisconsin and Michigan. The Vermont maple syrup doesn't have that smoky flavor.
