Step 1
Warm the vegetable oil in a large saucepan over medium heat. Add the shallots and cook, stirring constantly, for 3-4 minutes.

Stir in the rice and cook, stirring constantly, for 3-4 minutes or until the rice is lightly browned.

Add the vegetable stock, reduce the heat to low, and cover. Cook, stirring occasionally, for 30 minutes.

Stir in the broccoli rabe. Continue to cook, covered, 10-15 minutes more, until the rice is tender.

Season with salt and pepper, then remove the saucepan from the heat.

Preheat a broiler. Lightly oil a 9-by-13-inch baking dish. Be sure the baking dish is flameproof.

Combine the cashews, Parmesan cheese and parsley in a small bowl.

Transfer the rice mix to the baking dish, then sprinkle the cashew mix evenly over the top.

Place the baking dish in the broiler, about 3 inches from the heat, and broil for 3-4 minutes until the top is a golden brown. Remove and serve at once.
