How to Make Brown Rice and Broccoli Rabe Pilaf

This hearty and healthy side dish will please everyone's winter palate. Very adaptable for festive dinners. Serves six.

  • 1/2 lb. broccoli rabe, trimmed and coarsely chopped

  • 1 tsp. minced fresh parsley
  • 2 shallots
  • 3 c. heated vegetable stock
  • salt and pepper to taste
  • 3/4 c. chopped cashews

  • 1/4 c. freshly grated Parmesan cheeses
  • 3/4 c. chopped cashews
  • 3 c. heated vegetable stock
  • 1/2 lb. broccoli rabe, trimmed and coarsely chopped
  • 1 tsp. minced fresh parsley
  • 3 tbsp. vegetable oils
  • 1 1/2 c. brown rices
  1. Step 1

    Warm the vegetable oil in a large saucepan over medium heat. Add the shallots and cook, stirring constantly, for 3-4 minutes.

  2. Step 2

    Stir in the rice and cook, stirring constantly, for 3-4 minutes or until the rice is lightly browned.

  3. Step 3

    Add the vegetable stock, reduce the heat to low, and cover. Cook, stirring occasionally, for 30 minutes.

  4. Step 4

    Stir in the broccoli rabe. Continue to cook, covered, 10-15 minutes more, until the rice is tender.

  5. Step 5

    Season with salt and pepper, then remove the saucepan from the heat.

  6. Step 6

    Preheat a broiler. Lightly oil a 9-by-13-inch baking dish. Be sure the baking dish is flameproof.

  7. Step 7

    Combine the cashews, Parmesan cheese and parsley in a small bowl.

  8. Step 8

    Transfer the rice mix to the baking dish, then sprinkle the cashew mix evenly over the top.

  9. Step 9

    Place the baking dish in the broiler, about 3 inches from the heat, and broil for 3-4 minutes until the top is a golden brown. Remove and serve at once.

Tips & Warnings
  • Substitute broccoli florets if broccoli rabe isn't available. (Broccoli rabe also masquerades under the names rapini and broccoli rape.)
  • Try Wehani brown rice (a basmati rice found in most health food stores) for an extra nutty flavor.
