If you prefer, making your own pumpkin puree is a simple process that you can do a few days in advance of your holiday get together.       Place your pumpkin puree into plastic zip top bags. If you are using store-bought canned pumpkin, remove the puree from the aluminum can that it is packaged in. Leaving it in the can once opened can alter the flavor. If you will be saving the puree for more than 1 month, portion it into 1-cup amounts in each bag.

      Fold the bag gently around the puree to remove air before you seal the bag. Write the date onto the bag, marking the day it was made.

      Refrigerate your puree for up to 1 month or freeze for up to 1 year. If freezing, thaw only the amount needed for your recipe.
