How to Cook Lamb Steak in a Pan

Lamb is meat that comes from a young animal, usually less than a year old. It is often tender, has a mild flavor and the meat is lean. To make sure you buy the best lamb steaks at a butcher or supermarket, only purchase meat that is red in color, has some marbling and comes with a small amount of fat trim. Things You'll Need

  • 4 lamb steaks
  • 2 tbsp. of virgin olive oil
  • 2 garlic cloves
  • 1 small onion
  • 4 large basil leaves
  • 1 lemon
  • 1 can of artichoke hearts
  • 2 tsp. oregano
  • 2 cups of tomato sauce
  • 1/2 cup of red wine
  • 3/4 cup of water
  • Salt and pepper
  • Sharp knife

  • Small bowl

  • Frying pan or skillet

      Juice the lemon. Chop the basil and oregano leaves and add to the lemon juice. Season with salt and pepper and mix. Use a pastry brush to brush the mixture over the lamb steaks. Turn the steaks over and brush the other side.

      Cover the steaks with paper towels and place in the refrigerator for one hour to allow the lemon juice mixture to soak into them.

      Chop the garlic and onions until minced. Combine the red wine with the tomato sauce and water. Add garlic and onions and mix.

      Heat olive oil over a medium heat in the frying pan or skillet. Pour half of the tomato sauce mixture into the pan, making sure the bottom of the pan is covered. Add the lamb steaks. Pour the remainder of the sauce over the steaks. Arrange the artichokes around the side of the pan and spoon some of the sauce over them. Sprinkle salt and pepper over the contents.

      Heat until the mixture in the base and around the sides of the pan is bubbling. Turn down the heat and cover the pan. Simmer for an hour. After 30 minutes, turn the lamb steaks over. Spoon the sauce over the top of the steaks and continue to cook.

      Check the temperature of the lamb with a meat thermometer before serving. Lamb should be cooked to a temperature of 160 degrees. Serve with potatoes and a side vegetable.

  • If you choose to thaw frozen lamb steaks in the refrigerator, one of the safest ways to do so, be aware thick steaks can take a couple of days, so allow enough time.
