Make decadent maple glaze for delicious baked desserts and breads and all types of whole muscle meats. Maple glaze is excellent on a number of vegetables, tofu and even rice. You can prepare it in less than 30 minutes to add flavor and an appetizing shine to whatever it is paired with. Glaze is similar to a fine sauce or gravy, in that its sole purpose is to augment the flavor of the food it is used with.   • Unsalted butter
  • Pure maple syrup
  • Vanilla flavoring
  • Grated ginger root
  • Lemon juice
  • Soy sauce
  • Heavy cream

Instructions

      Melt ½ stick of unsalted butter in a medium saucepan over low heat.

      Add 1 cup pure (not imitation) maple syrup, along with not imitation 1 tablespoon vanilla, 2 tablespoons finely grated ginger root, 3 tablespoons each of freshly squeezed lemon juice and soy sauce and 2 tablespoons of heavy cream.

      Simmer the maple syrup mixture over medium-low heat until it is reduced to approximately 1 cup, remove it from heat and let it cool to room temperature.

      Brush the maple syrup glaze over pork, beef, poultry or fish before or after cooking, depending upon the directions in the recipe.

Tips & Warnings

  • Use the glaze as soon as it cools, since it sets up and solidifies quickly.

  • Stir the mixture regularly and often so it does not scorch.
