Radishes are not only a common garnish, but a highly nutritious vegetable that is low in calories. The bright red root with a stark white interior is a good source of folate, potassium and Vitamin C. Cutting the radish into shapes can encourage the pickiest of eaters to try the vegetable while creating an intricate display.   • Radish
  • Scrub brush
  • Kitchen towel
  • Paring knife
  • Large bowl

Instructions

      Rinse radishes under cold water and use a scrub brush to remove any dirt. Dry with a clean kitchen towel.

      Trim down the greens, and cut off the bottom of the radish. Cut an X-shape into the top of the radish. Trim straight down the four sides to remove a thin layer of the skin, which should expose the white layer. Cut halfway down the radish two times on all four sides.

      Fill a bowl with cold water. Add ice and salt. Stir. Place the trimmed radish bulbs inside. Wait for the radishes to bloom. This can take between 30 minutes and 24 hours, depending on how large you prefer the size of the floret.
