Instructions

    • 1

Place a cup of flour in one dish and two beaten eggs or batter mix in a second. If using only beaten eggs, place bread crumbs in the third dish. Heat the oil to the correct temperature -- follow recipe instructions for the type of meat you are cooking as temperatures will fluctuate.

    • 2

Place the meat in the flour dish, coating it evenly.

    • 3

Transfer the meat to the egg or batter dish, then into the third with your dry hand.

    • 4

Allow the meat to rest for about 10 minutes so that the batter soaks in and adheres properly to the meat.

    • 5

Place the meat in the oil carefully and don't touch it until it either floats to the surface or has turned an appropriate golden brown.

Tips & Warnings

  • Don't underestimate the importance of heating the oil to the proper temperature. If the oil is too cold it will soak into the batter and the batter will slide off the meat.
