Chorizo is a pork sausage seasoned with a variety of spices. It is used most often in Spanish and Mexican cuisine. Sometimes chorizo comes in a raw form that should be cooked before eaten, while other times chorizo comes in a dried cured form that does not need to be cooked.       Slice the chorizo sausage into thin circles. Skip this step if your chorizo has been pre-sliced.

      Peel away the outer skin covering the chorizo. This outer wrapping should not be eaten.

      Heat a small amount of oil in a fry pan on the stove. Chorizo will not need much oil to cook because of its fat content.

      Place the slices of chorizo into the hot pan.

      Fry each side of the chorizo slices for a few minutes until they are cooked through and begin to crisp up.

      Remove the chorizo from the heat and let cool for a few minutes.
