Propane grills and other gas grills are useful for more than direct high-heat cooking. When you pull the lid down over a gas grill, the environment inside reaches oven-like temperatures. With the right setup you can even save the roasting juices, and clean-up is simpler than a roasting pan in a traditional oven. Using your grill as an oven is similar to making barbecue. The process works best with tough cuts of meat that become tender over a long period of cooking. Does this Spark an idea?

      Remove the grates from the grill and position an aluminum roasting pan so the meat rests above the pan as it cooks. Replace the grates.

      Ignite the gas burners on the opposite side of the grill, away from the roasting pan. Close the grill lid and wait for the temperature under the lid to rise.

      Lift the lid and lay meat on the grill so it rests above the roasting pan. Place vegetables around the meat. If you want vegetables to roast in the meat's juices, add vegetables to the pan in step 1 before placing the pan under the grates.

      Keep the lid closed for as long as possible while food cooks in the heated environment under the lid. Remove meat and vegetables when they are done and use the pan juices to create a sauce.
