How to Stuff Poblano Peppers

Poblano peppers resemble sweet bell peppers, but are longer, thinner, darker and spicier. In their dried form, they are called ancho peppers. Mexican in origin, they appear in many Mexican dishes. They are often chopped and added to dishes to create depth of flavor and a little heat. As with bell peppers, poblano peppers can be filled and baked with a variety of stuffing mixtures, including taco-flavored hamburger mixtures, cheese, potatoes or rice. Things You'll Need

  • Cookie sheet
  • Non-stick spray
  • 4 Poblano peppers
  • ½ cup chopped onion
  • Skillet
  • 1 clove garlic
  • ½ tsp. cumin
  • ½ tsp. oregano
  • 1 cup cooked rice
  • ½ cup refried beans
  • ½ cup petite diced tomatoes
  • ½ cup salsa
  • 1 cup shredded cheddar cheese, divided

  • Aluminum foil

Instructions

  1. Prepare the Poblanos

      Place the poblano peppers on a cookie sheet and broil in the oven until the skin has turned black.

      Remove the sheet from the oven, and when the peppers have cooled a bit, peel away the skin.

      Cut the pepper in half horizontally and remove the veins, seeds and core.

    Stuff the Poblanos

      Saute the chopped onion in the oil until it is translucent, then remove the skillet from the heat. Add garlic, cumin and oregano and mix well.

      Stir in the cooked rice, refried beans and half the cheese, mixing thoroughly.

      Spray a baking pan with nonstick spray and preheat the oven to 425 degrees Fahrenheit.

      Mix the tomatoes and salsa and pour the mixture into the bottom of a baking pan.

      Fill each of the eight poblano halves with the rice and bean mixture and sprinkle the remaining half of the cheese on top. Place the stuffed poblanos on top of the tomato mixture. Cover the pan with aluminum foil.

      Put the pan into the oven and bake the poblanos for 40 minutes or until they have become soft. Serve the tomato gravy over the stuffed poblanos.

  • Vary the stuffing by choosing a filling of black beans, chopped tomatoes and corn, or mix seafood with a thick cream sauce, Poblano rellenos are poblanos stuffed with white cheese, dipped in batter and fried.
