Artichokes are a Mediterranean vegetable brought to the United States by the French and Spanish. They grow best in cool, mild climates and don't tolerate heat or cold spells. Most artichokes are grown along the central coast of California because the weather is perfect for them. Also called the globe artichoke, this plant is related to the thistle. Instructions

      Fill the seed trays with seed starter and plant the artichoke seed about a half-inch deep. Keep the seed starter moist at all times. Place the seed trays under grow lights and allow them to grow for six to eight weeks until the last frost in your area has passed.

      Select a site outside for the artichokes in full sun and well-draining soil. Add 3 to 4 inches of compost to the soil and work it to a depth of 6 to 8 inches.

      Dig holes as deep as the root ball and twice as wide. Place the transplants into the holes and fill the holes with soil.

      Harvest the flower buds before they open. This is the vegetable.

      Cut down the artichokes in fall and cover the plant with an inch or two of mulch.

  • Plant your artichokes in a fenced off area of your garden to prevent deer from trying to eat them.
