These pork chops could use some Cuban flavor.

Mojo is a grilling marinade from Cuba. You can buy it from most grocery stores or you can make it from scratch with the tartest oranges or limes. Though it's mainly used on proteins such as chicken, shellfish or pork, don't limit the marinade to these ingredients. Mojo takes a Cuban sandwich or boiled yucca to a higher level of culinary delight. Does this Spark an idea?

Things You'll Need

  • 1/2 teaspoon. ground cumin
  • Salt and pepper
  • 2/3 cup sour orange or lime juice
  • 1/3 cup olive oil
  • 7 cloves of garlic

Instructions

      Pour olive oil into a saucepan at medium heat.

      Slice garlic cloves into thin pieces.

    • 3

      Cook the garlic until it's toasted. This should take no more than a minute if your oil is properly heated.

      Pour juice and cumin into the pan, along with salt and pepper to taste.

      Wait until the juice boils. Taste to see if it needs more spice.

      Put the marinade in a plastic container and refrigerate for at least two hours to let the flavors meld.

      Cut slits into the meat and marinate in the refrigerator for at least four hours before grilling. Use excess mojo to baste the meat during grilling.

Tips & Warnings

  • Add some chopped cilantro, oregano and/or chiles as the juice is coming to a boil for a different taste.
