Things You'll Need

  • Broiler
  • Greased broiler pan
  • 4 red fish fillets
  • 2 tbsp. olive oil
  • 2 tbsp. fresh lime juice
  • 2 tbsp. fresh lemon juice
  • Salt to taste
  • Pepper to taste
  • 2 tbsp. fresh ground basil
  • 4 lemon wedges
  • 4 sprigs basil

Instructions

      Preheat your broiler. Grease the broiler pan with vegetable oil then position it 2 to 3 inches from the heat source.

      Place your red fish fillets, with the skin side down, on the broiler pan. Brush each fillet with olive oil.

      Pour both the lemon and the lime juice onto fillets. Season with salt and pepper. Then, sprinkle each fillet with ground basil.

      Place fillets in the broiler. Broil for 4 to 6 minutes or until fillets flake with a fork.

      Serve hot. Garnish each plate with a lemon wedge and sprig of basil. Makes 4 servings.
