Indian food is often enjoyed not only for the taste, but also for the warm aroma of the rich spices that are used in the meal preparation. With the scent of coriander mixing with exotic notes of turmeric, the kitchen itself becomes a unique sensory experience. Fried chicken liver, sometimes called a pepper fry, is a popular Indian dish that can be made at home in a half an hour with ingredients that are commonly available at your local grocery store. Things You'll Need

  • 1 lb. chicken liver
  • 1 onion
  • 2 green chilies
  • 1/4 inch piece of ginger
  • 4 garlic cloves
  • 2 tbsp. pepper powder
  • 1 tbsp. coriander powder
  • Pinch of turmeric powder
  • 1 cup coriander leaves
  • 2 tbsp. oil
  • 1 lemon
  • Salt

Instructions

      Place the liver on a cutting board, using a sharp knife to cut the meat into small bite-sized pieces.

      Heat the oil in a frying pan over a medium-high heat then add the chopped onion and saute. Stir in the chopped ginger, garlic and green chilies.

      Add the coriander, pepper and turmeric powder. Mix well and cook for one minute.

      Place the chopped liver pieces into the frying pan and flavor lightly with salt. Turn the heat to low and cover the pan, cooking until the spice mixture dries completely.

      Mix in the coriander leaves and the juice of one lemon to finish. Serve hot with a rice or lentil based side dish such as sambar or biryani.
