How to Tell if Shellfish Are Fresh
More than most foods, freshness is important when it comes to buying seafood. If left out too long, some species of shellfish produce toxins known as scombrotoxins or histamines. This can occur if shellfish has been left unchilled or out in the sun too long. If the levels of scombrotoxins are high enough, eating spoiled shellfish can make you sick. Ask the merchant to show you any tags or labels that come with the shellfish. The FDA requires that all shellfish come with a tag, displaying information about the product and the certification number of the processor. Don't buy shellfish without this tag.

Examine the shellfish for cracks in the shell. Discard any mussels, oysters and clams that are broken or cracked.

Buy only live lobsters and crabs if not pre-cooked. Never buy a dead lobster or crab if it's not cooked already. They are alive if their legs move.

Tap on the clams, oysters and mussels you buy. Since they are also alive, they should close up when you tap on them. This is a good sign. Do not use any that are unresponsive.

Put shellfish in the fridge as soon as you get home and use within two days, if not sooner.
