Stuffed peppers are passe. For an eye-catching, edible salad bowl, hollow out a cucumber. Members of the same family as squash, cucumbers contain an inner cavity of edible, squash-like seeds. These seeds in mature cucumbers can be difficult to digest, but they are easily removed by hollowing out the cucumber. You are left with a c-shaped cucumber half, ready for stuffing after you hollow it. Does this Spark an idea?

  • Vegetable peeler
  • Knife
  • Melon baller or spoon

Instructions

      Peel the whole cucumber, if desired.

      Slice the cucumber in half, lengthwise, to expose the seed cavity.

      Insert the tip of a spoon or melon baller into the top of the seed cavity at one end of one of the cucumber halves.

      Run the spoon down the length of the cucumber's seed cavity to remove the seeds, leaving the cucumber flesh intact.

      Repeat, hollowing out the other half. Stuff the hollowed cucumber halves with finely chopped salad such as chicken, egg or tuna salad or pimento cheese. Another option is to slice the cucumber halves into c-shapes and add to salads to enjoy the cucumber flavor without the seeds.
