How to Fire-Roast Onions
Roasting onions on a grill is an excellent way to bring out the flavors and sugars from within the vegetable. Fire-roasting any veggie, especially onions, carmelizes the skin while adding a slight char and crispiness to the taste. Cut the onions into strips 1/2-inch thick. Brush each slice with olive oil and place on the heated grill.

Roast the slices for two minutes, then use the tongs to turn them over. Cook for two more minutes, or until both sides have a nice, black char mark.

Remove the onion slices from the grill, let stand for three minutes and serve.
