Transform an unhealthy submarine sandwich from a meat and cheese sandwich into a healthy, nutrient-packed meal. Using vegetables to make your submarine sandwich instead of meat brightens the color of the sandwich, making it more eye-appealing. Things You'll Need

  • 2 baking sheets
  • 6 submarine or hoagie rolls, split
  • 1 cup button mushrooms, sliced
  • 1 cup zucchini, sliced
  • 1 cup onion, sliced
  • 1 cup bell peppers, sliced
  • 3 tbsp. olive oil
  • 6 tbsp. butter or mayonnaise
  • 6 romaine or butter leaf lettuce leaves
  • 3 tomatoes, sliced
  • 6 slices provolone or cheddar cheese (optional)

      Preheat the broiler. Spread open the submarine rolls without breaking them apart and place on a baking sheet with the cut portion facing up.

      Toss the mushrooms, zucchini, onions and bell peppers with the olive oil and spread on the second baking sheet.

      Place the baking sheets under the broiler.

      Remove the bread after five minutes or when it becomes toasted. Leave the vegetables in and take them out when they are soft and limp, a total cooking time of 10 to 15 minutes.

      Spread 1 tbsp. of butter or mayonnaise onto the toasted surface of each submarine.

      Lay a lettuce leaf on top of each roll. Arrange half a sliced tomato over the lettuce.

      Evenly divide the cooked vegetables over the submarines.

      Optionally top each sandwich with a slice of cheese and return it to the broiler for two to five minutes or until the cheese melts.
