How to Dry Egg Pasta
Drying homemade egg pasta takes a few, easy steps. The result is fresh pasta ready to cook that serves as a great dinner for you, your family or your guests. The process takes about one hour. Because different kinds of fresh egg pasta take different lengths of time to dry, you may need to practice a few times before you find the perfect combination of drying locations and time. Clean your pasta drying rack. Make sure the rack is dry. Apply a dusting of flour to the rack.

Place the pasta on the rack after you have thoroughly run it through the pasta roller. Let the pasta dry on the rack for about 15 minutes. Move the pasta to a baking sheet. The pasta may become brittle if left on the drying rack for too long.

Allow the pasta to dry for one hour. You will know the pasta is done drying when the pasta is dry to the touch and the strands or pieces do not stick together.

Cook only one portion at a time immediately after drying. If you want to store dried pasta, place it in an airtight container and refrigerate it.

Tips & Warnings
Use a flat, dry kitchen towel to dry your pasta if you don't have a pasta rack. Dust the towel with flour as well.
