When it comes to steaks, filet mignon is the cream of the crop. This revered steak, from the small end of a beef tenderloin cut, is praised for its tenderness.   • Olive oil

      Defrost the frozen filet mignon either in the refrigerator or in a pan of cold water, changing the water every 30 minutes. The refrigerator is the safest method. Filet mignon should defrost within a day. If you are short on time, the cold-water method should defrost the steaks in one hour or less.

      Bring the steaks to room temperature 30 minutes before cooking.

      Turn the broiler onto high heat and place the oven rack 6 inches from the broiler heat source. Place a cast-iron skillet on the rack in the oven.

      Brush the filet mignon with olive oil and season with salt and pepper to taste.

      Take the skillet out of the oven, using oven mitts, and place on the stove.

      Place the steaks in the skillet and sear for three minutes on each side for a crisp crust.

      Place the pan with the filet mignon back into the oven and broil until done. Insert a meat thermometer in the center of the meat to determine temperature. For the most tender results, cook filet mignon to medium rare, or 130 to 140 degrees Fahrenheit. Medium filet mignon should be cooked to between 140 to 150 degrees Fahrenheit, and medium-well to between 150 to 160 degrees Fahrenheit.

      Remove from the oven and let the filet mignon rest for five minutes before serving.

Tips & Warnings

  • Serve the filet mignon with a pat of blue cheese butter, balsamic vinegar or sauteed chanterelle mushrooms for additional flavor.

  • Avoid defrosting the filet mignon in the microwave because of the potential for the meat to start cooking in some spots, while others areas are still frozen.
