How to Feed Two People With Only One Chicken Breast


Chicken is one of the most versatile meats to have on hand in the kitchen. With chicken, you can make a seemingly endless array of soups, salads and sandwiches. Chicken provides an ideal backdrop for more complex sauces and flavors. If you have only one chicken breast to serve to two people, you may think it is not enough for a full meal. But with a few extra ingredients, you can transform one chicken breast into a filling and tasty lunch or dinner for two.

  • Make a chicken skillet dinner. Cook the chicken breast in the oven or on the stove top, then shred it into small pieces with a knife and fork. Place your desired ingredients into a skillet, such as beans, rice, vegetables and sauce. Put the chicken into the skillet and cook the mixture. This may serve more than two people depending on how many extra ingredients you add.

  • Cook chicken burritos or tacos. Cut the chicken into chunks and cook it on the stove top with a bit of taco seasoning. Place chicken pieces into a hard taco shell or soft tortilla. Add your favorite toppings, like cheese, lettuce, sour cream and tomatoes.

  • Fix a bowl of pasta and add chicken for a bit of extra flavor. It is possible to add chicken to many pasta dishes, such as fettucini Alfredo or angel hair pasta with pesto. For an even more filling meal, add vegetables to the pasta, such as peas, mushrooms or broccoli.

  • Serve a salad with strips of chicken on top. Toss in your favorite salad ingredients, like onions, carrots, tomatoes or croutons. Add a splash of salad dressing, such as ranch, blue cheese or a vinaigrette. This makes a flavorful appetizer or main meal.

  • Make popcorn chicken if the breast is large. Pound the breast until it is fairly flat. Cut the chicken into cubes. Coat the cubes in egg, flour and bread crumbs, then fry them in a pan of hot oil. Serve the popcorn chicken with honey mustard, ketchup or barbecue sauce.
