Weddings are full of tradition. Old traditions are passed down from previous generations and new traditions are established. Wedding traditions can be familial, cultural or religious. One common wedding tradition is to save the top layer of the wedding cake for the first anniversary. Obviously, proper preservation methods have to be used in order to have a cake you can eat and enjoy to commemorate your wedding. Careful storage in the freezer allows you to incorporate this tradition into your marriage celebration.

  • Cake servers
  • Plate
  • Tongs
  • Plastic wrap

      Place your hands underneath the top tier of the cake, if it's supported above the rest of the cake. If the top tier is sitting on the wedding cake, slide two cake servers under the cardboard cake tier for support.

      Transfer the cake tier carefully to a large plate. Use tongs to lift off flowers or any other sugar-based decorations that are sitting on top of the cake. Set the flowers on a piece of plastic wrap.

      Put the cake tier and flowers in the freezer for five hours. This hardens the frosting enough so it won't stick to the plastic wrap when you prepare it for storage.

      Remove the cake tier from the freezer. Wrap the entire cake tier with plastic wrap ensuring it is completely covered. Slide the wrapped cake into a large resealable bag. Place the flowers in a separate plastic, resealable bag so you can place them back on the cake when you're ready to eat it.

      Keep the cake in the freezer until the day before your first wedding anniversary. Move the cake to the refrigerator overnight to begin thawing it. Set it on the counter for one or two hours before eating to allow it to warm to room temperature.

Tips & Warnings

  • Wedding cake can be frozen in slices, if preferred. Use the same steps as above to properly freeze the slices.

  • Avoid wrapping the cake tier in aluminum foil as the cake can develop freezer burn.
