How to Preserve Peanuts
Peanuts aren't true nuts but a legume that's related to beans. Pollinated peanut flowers grow long stems that penetrate the soil and grow into mature peanuts underground. The papery shells protect the nuts from fungus and mold, so long-term preservation works best for peanuts kept in their shell. You can extend the storage life of both shelled and unshelled peanuts by storing them correctly. Fresher peanuts have the best flavor, with the quality gradually declining during long storage. Dry recently harvested peanuts in the shell. Spread them out in a single layer in a warm, well-ventilated area for two weeks so the shells dry completely.

Place the peanuts in a mesh bag, leaving them in their shells. Hang the bags in a cool, dry place and store them for three to six months.

Fill a storage container with shelled peanuts. Seal the container lid closed and store the container in the refrigerator for up to three months or in the freezer for six months. Shelled peanuts go rancid quickly if not refrigerated or frozen.

Roasting extends the pantry storage life of shelled peanuts so they retain their quality for up to six months in a cool, dry place. Roast the peanuts at 350 F for 30 minutes.
Moisture causes mold and mildew growth on peanuts. Always store in a dry area and avoid condensation in the storage containers to prevent mold growth.
