How to Ferment Celery
Celery, like many fruits and vegetables, can be fermented. Fermenting is the process of anaerobically converting sugar to carbon dioxide in organic materials such as fruits and vegetables. Celery isn't typically fermented on its own. It is commonly a part of a mixture of fruits and vegetables. However, the process for fermenting celery is the same as the process for fermenting other vegetables or mixes of vegetables. Does this Spark an idea?
Things You'll Need
- Crock pot
- Plate just smaller than the diameter of the crock pot
- Gallon container of liquid (water or milk jug)
- Towel
- Bowl
- Salt

Cut the celery into bite-sized pieces. There is no exact size needed for fermentation. This is simply so the pieces easily fit into the crock pot.

Place the celery in a bowl and salt it to your desired taste. No exact amount of salt is needed for the fermentation process.

Pour the chopped celery into your crock pot. There is no exact amount of celery needed to complete the fermentation process. Do not fill the crock pot any higher than the fill line to prevent overflowing.

Lay a plate over the celery. Place the gallon container of liquid on top of the plate. The extra weight keeps needed pressure on the celery while it is fermenting and presses extra water out of the celery.

Spread a towel over the top of the crock pot. The towel keeps some of the warmth within the crock pot but allows more ventilation than when the crock pot is topped with its actual cover. Some air circulation is needed for fermentation.

Leave the crock pot to sit, turned on, for several days. The number of days that the celery is left in the crock pot depends on the taste and texture that you prefer. Check the crock pot daily for mold that may develop on the celery, plate, container of liquid or towel. Wipe off any mold with a clean towel. Taste the celery and remove it when it reaches the flavor you prefer.
