How to Turn Off the Automatic Updates on an iPod
Apple's iPod devices allow you to listen to music and watch videos on your device. Although some iPod models are capable of connecting to the iTunes Store through a Wi-Fi connection, most iPods must be connected to a computer to receive media files. When you connect your iPod to your computer and the iTunes software launches, iTunes automatically checks for available updates for your iPod. Stop iTunes from performing this check if desired.

Tips & Warnings
ITunes updates are different than iPod updates. You can enable software updates while the iPod is not connected, download an iTunes update and then disable software updates before reconnecting your iPod. This will allow you to keep iTunes updated without updating the software on your iPod.
