Serve up cooling vegetables with an enchilada sauce that's too spicy.

If you have overdone the spiciness of your enchilada sauce you don't need to throw it away immediately. Before you give up on it and start all over, first try adding other ingredients to it to lessen the heat. If that fails, you can serve accompanying food that has cooling properties to bite into after eating the sauce. Simply drinking water won't help as it only moves the spiciness around in your mouth. Things You'll Need

  • Tinned pineapple
  • Milk, cream, sour cream or yogurt
  • Water
  • Lime juice
  • Stock
  • Flour
  • Cheese
  • Bread
  • Rice
  • Lettuce
  • Tomato
  • Avocado
  • Tomato sauce

Instructions

  1. For the Sauce

      Blend tinned pineapple in a food processor and add to the sauce.

      Add 2 tbsp. of a dairy product like milk, cream, sour cream or yogurt. Taste and add more if needed.

      Add water and lime juice. Taste, and if necessary add more of all the ingredients minus the chili. You may need to add flour if it becomes too runny.

      Add chicken or vegetable stock instead of water so as not to dilute the flavor.

      Pour in tomato sauce and taste, then adjust the other ingredients if necessary.

    For the Table

      Place a dish of cheese or yogurt on the table for your guests to eat to cool their mouths after eating the sauce. Yogurt in particular has a cooling effect after spicy food.

      Put dishes with bread or rice on the table, as these mild flavors will counteract spicy food.

      Prepare a dish with lettuce, tomatoes and avocado for guests to bite into after the sauce to help cool down their mouths.

Tips & Warnings

  • Make sure you always remove the seeds from the chilies as this is where most of the heat is.

  • Keep tasting the sauce while you're preparing it to avoid it becoming too spicy.

  • Never touch your eyes after handling the chilies or their seeds as this will irritate them.
