      Remove the meat from the bone and cut it into cubes or evenly sized chunks.

      Pull off any visible sinew from the meat, especially chicken pieces.

      Freeze the meat for 10 to 15 minutes before grinding to keep it from turning to mush in the grinder.

      Place the meat into a food processor bowl, and pulse several times until the meat reaches the desired texture. Alternatively, feed the meat through the top of a meat grinder fitted with a grinding plate.
