How to Make Ground Beef or Chicken
Rather than wondering what parts of an animal were used in a package of ground meat from the butcher, use a home grinder to make your own. Grinding your own meat at home gives you the ultimate control over the ingredients. It will also help you to avoid ground meat recalls from commercially ground products. You determine the cuts of meat to use, which, in turn, changes the fat content of the ground meat. Remove the meat from the bone and cut it into cubes or evenly sized chunks.

Pull off any visible sinew from the meat, especially chicken pieces.

Freeze the meat for 10 to 15 minutes before grinding to keep it from turning to mush in the grinder.

Place the meat into a food processor bowl, and pulse several times until the meat reaches the desired texture. Alternatively, feed the meat through the top of a meat grinder fitted with a grinding plate.

Use the ground beef or chicken immediately in your recipe.
