How to Rename Folders on the iPod Touch
One of the biggest features introduced in the iOS 4 operating system for the iPhone, iPod touch and iPad is the ability to create folders for apps. Folders let users move up to 12 apps into one folder so you don't have all kinds of similar apps taking up space on your iPod touch home screen. However, if an existing folder name becomes inaccurate because of other apps you've added to the folder, you can change it so you don't cause yourself or anyone else to become confused about the contents of the folder.
