Baked tuna patties are a quick and easy meal.

When you're short on time and want to serve a healthy and delicious meal, consider baking tuna patties. Use canned tuna you have on hand in your pantry and combine it with bread crumbs and chopped vegetables such as onions, bell peppers and celery. You can serve baked tuna patties on buns or by themselves along with a salad and some fries or potatoes for a meal that goes from pantry to oven in less than 30 minutes. Does this Spark an idea?

Things You'll Need

  • 1/8 cup chopped onions
  • 1/8 cup chopped bell peppers
  • 1/8 cup chopped celery (optional)
  • 1 tbsp. vegetable or olive oil
  • Frying pan
  • Bowl
  • Whisk
  • 1 egg
  • 5 oz. canned tuna (2) in water, drained
  • 1/4 cup mayonnaise
  • 1/4 cup bread crumbs
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • Baking sheet
  • Buns (optional)

Instructions

      Preheat the oven to 375 degrees F.

      Sauté 1/8 cup chopped onions, 1/8 cup chopped bell peppers, 1/8 cup chopped celery (optional) in 1 tbsp. vegetable or olive oil in a frying pan over medium heat. Cook for about 5 minutes or until the vegetables are tender.

      Crack 1 egg into a bowl and beat well with a whisk. Mix 1/4 cup mayonnaise in with the egg.

      Add tuna and 1/4 cup bread crumbs to the egg mixture in the bowl. Add the vegetables, 1/4 tsp. salt and 1/4 tsp. pepper. Mix all the ingredients well.

      Scoop out 1/2 cup of the tuna mixture and roll into a ball. Place on a baking sheet and flatten out with your hand into a patty shape, approximately 1/4 inch thick. Repeat with the rest of the tuna mixture.

      Bake for about 20 minutes or until the patties are golden brown. Serve plain or on a bun along with a salad or other side dishes of your choice.

Tips & Warnings

  • Add fresh or dried dill and parsley to the tuna patties to enhance their flavor.

  • If you don't have onions and bell peppers on hand, you can use other vegetables in the tuna patties such as finely chopped carrots, minced garlic or diced zucchini.
