How to Flatten Shrimp
Each species of shrimp have their own unique flavor and texture. These characteristics are influenced by the water the shrimp was raised in and what the shrimp ate. Although many recipes call for uncut shrimp, others call for the shrimp meat to be split and flattened. One popular dish that uses this preparation technique is shrimp sushi. Carefully confirm the freshness of the shrimp when purchasing. If there is any hint of a fishy smell, it's a sign the shrimp is way past its prime. Does this Spark an idea?

Thaw the shrimp if frozen. If fresh, rinse the shrimp under running water and pat dry with paper towels.

Clean the shrimp. Use your hands to pull the head, legs and shell off of the shrimp. Use a paring knife to cut along the outer edge of the shrimp's back, about 1/4 inch deep. Remove the exposed spinal vein.

Flatten the shrimp by using your hand or the flat side of a knife to press firmly along the middle of the shrimp. If necessary, make several small horizontal cuts to remove tension in the flesh.
