How to Make Reduced-Fat Mashed Potatoes

A potato ricer creates the best mashed potatoes of all time, even if you're cutting back on the fat grams. Serves 6.

Difficulty: Moderately Easy

Instructions

Things You'll Need:

• 3 lbs. russet potatoes peeled and cut into large chunks
• 6 tbsp. unsalted butter
• Groceries
• Peppers
• Salt
• Salt
• Large Pots
• Potato Ricers
• Small Saucepans
• Wire Whisks

1. Put potatoes in a medium pot and cover with cold water.

2. Add a good pinch of salt and bring to a boil over medium-high heat.

3. Lower the heat to medium and simmer about 20 minutes, or until the potatoes are easily pierced with the tip of a knife.

4. Drain potatoes and reserve 1 cup of the cooking water.

5. Place the cooking water in a small saucepan with 4 tbsp. butter and bring to a simmer over low heat. Cover.

6. Take drained potatoes and return to the pot they were cooked in and place over medium heat.

7. Shake potatoes until they are dry and mealy and remove from heat.

8. Pass potatoes through a potato ricer.

9. Gradually whisk in the mixture of butter and potato cooking water.

10. Season to taste with salt and pepper, and serve immediately.
