How to Make Greek Pasta
Flavorful Greek pasta uses simple, fresh ingredients that are staples of Mediterranean cuisine, such as feta cheese, Kalamata olives, olive oil, tomatoes and capers. The salty feta and tomatoes complement each other, and hot garlic olive oil brings all the elements of the dish together. The light ingredients make this dish ideal for a summertime dinner. Things You'll Need
- 2 Tbsp. toasted pine nuts
- 1 lb. grape tomatoes
- 1/2 cup Kalamata olives, pitted
- 1/4 pound feta cheese, crumbled
- 3 Tbsp. drained capers
- 3 Tbsp. parsley, chopped
- 1/4 tsp. crushed red pepper flakes
- Salt
- Pepper
- 1 lb. angel hair pasta
- 6 Tbsp. olive oil
- 3 cloves garlic, minced

Toast the pine nuts in a dry skillet over medium heat for two to three minutes or until the nuts are golden brown.

Combine the nuts, tomatoes, olives, feta, capers, parsley and red pepper flakes in a large mixing bowl. Add salt and pepper to taste.

Cook the pasta in a large pot of boiling water according to the package instructions. Drain the pasta.

Heat the olive oil over moderately low heat in a medium skillet. Add the garlic. Cook the oil for about one minute while stirring it.

Combine the garlic oil, cooked pasta and tomato mixture. Toss to mix the ingredients and serve.

Tips & Warnings
This dish can be served hot but can also be chilled and served as a Greek pasta salad, especially with penne or macaroni noodles in place of the angel hair pasta.
