The Correct Way to Light Altar Candles
In the Catholic Church the duty of lighting the altar candles falls upon the shoulders of the acolytes, who also are responsible for preparing the wine for mass. The lighting of the candles is performed before mass begins and they are not extinguished until mass is completely over. The number of candles used depends on the type of mass being held, with pontifical high masses using seven candles, high masses using six candles and lower masses using only two or four. Although different churches and different parishes use slightly different lighting methods, several general rules apply to all.

Light the inside candles first. If there are two acolytes to light candles, have them light the two candles nearest the cross at the same time. If there is only one acolyte, have him start with the inside candle on the Epistle side and then move to the Gospel side of the altar.

Light the next pair of candles. If there are two acolytes, have them light these candles simultaneously, if there is only one, have her light the right side first and then the left.

Light the third pair of candles in the same manner, if it is High Mass. The candles should be lit simultaneously if two are present, or the right candle first if there is only one acolyte.

Light the seventh, and highest candle first at a Pontifical High Mass, where seven candles are used. The altar is moved forward a bit and the seventh candle is brought into line with the others directly in front of it.
