How to Make a Moist Quick Bread
Quick breads are breads that rise quickly due to the inclusion of baking soda or baking powder. Quick breads don't have to be breads. Muffins, pancakes and other bread-like products can also be considered quick breads. The key ingredients in making a moist quick bread are buttermilk, baking soda and applesauce. The baking soda reacts chemically with the acids in the buttermilk and applesauce to help make the quick bread moist, while retaining a sturdy structure. Does this Spark an idea?
Things You'll Need
- 1 banana, mashed
- 3/4 cup sugar
- 1/2 cup applesauce
- 2 eggs
- 1 tsp. vanilla
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. cardamom
- 1 tsp. cocoa powder
- 3/4 cup buttermilk
- Cooking spray

Preheat oven to 325 degrees Fahrenheit. Combine in a large bowl one mashed banana, 3/4 cup sugar and 1/2 cup applesauce. Stir in two eggs and 1 tsp. vanilla.

Combine in a medium bowl 2 cups all purpose flour and 1 tsp. each of baking soda, baking powder, cinnamon, cardamom and cocoa powder. Stir until well combined.

Pour a quarter of the flour mixture into the bowl with the banana mixture and stir to combine well. Add in another quarter, combine, and repeat until the flour mixture is gone.

Spray a loaf pan with cooking spray. Pour the quick bread mixture into the pan. Place in the oven and cook for 50 to 60 minutes or until the top has browned and a toothpick inserted into the center comes out clean. Cool for 10 minutes before slicing and serving.
