How to Convert Cooking Times for Convection Roasting
Convection ovens are superior to standard ovens because they cook food better, faster, and more evenly. Circulating hot air around the food creates crispier food that retains more juices and loses fewer nutrients. Though using a convection oven is much like using a standard oven, you will need to make some changes to the cooking time and the temperature at which you cook the food. Read your recipe.

Note the instructed temperature and bake time.

Preheat your oven to the instructed temperature.

Calculate the amount of time your dish needs to bake in the oven. Convection ovens cook food 25 to 30 percent faster than traditional ovens. To convert the cooking time, multiply the time stated in the recipe by 0.75 and 0.7. The result is the converted cooking time range for a convection oven. If the original cooking time is less than 15 minutes, bake the dish for the same amount of time, but reduce the baking temperature by 25 degrees F to 30 degrees F.

Check the dish to see how well the food is cooked five to 10 minutes prior to when cooking time is up.

If your recipe calls for the dish to be covered and baked for an extended period of time, lower the temperature by 25 degrees F to 50 degrees F.
Place food in the middle of the oven and leave enough space between pans and the oven walls to allow room for the air to circulate.
