Prepare scrambled eggs for a large group of 200 using an unconventional preparation method. Bake the eggs in the oven instead of preparing them on the stove top. Oven baking the eggs reduces the amount of hands-on cooking time, and using larger baking pans allows an increased amount of eggs to be prepared at once. Things You'll Need

  • 4 steam table pans (12 inches by 10 inches by 2 inches)
  • Cooking spray
  • 200 eggs
  • 1 gallon half and half or milk
  • Spatula
  • 4 steam tables

Instructions

      Spray the inside of the steam table pans with cooking spray and preheat the oven to 350 degrees Fahrenheit.

      Break 50 eggs into each pan and add 1/2 qt. of half and half to each pan.

      Stir together the ingredients to break the egg yolks and combine them with the half and half.

      Bake two pans at a time in the oven for 25 to 30 minutes or until the eggs are just set.

      Stir the eggs every 10 minutes with a spatula as they cook.

      Place the prepared pans of eggs onto a steam table to keep the eggs warm until they are ready to serve.
