Instructions

    • 1

Gently wipe down the mushroom with a wet paper towel.

    • 2

Hold the mushroom upside down and cut off the stem with a sharp knife. Make sure to cut off the entire stem, but do not cut into the cap.

    • 3

Holding the mushroom upside down, spoon out the gills from inside of the cap. Hold the mushroom gently and do not exert too much pressure with the spoon against the cap. If you have difficulty with the spoon or any of the gills remain, use a sharp knife to carefully remove the remainder of the gills.

Rinse off the mushroom under cool water and allow it to dry.

Tips & Warnings

  • When purchasing portobello mushrooms, make sure to select firm, meaty mushrooms. Dry, slimy, and limp mushrooms may be in a state of decomposition.

  • If you would rather not use a knife, you can attempt to snap the stems off the mushroom instead of cutting them.

  • Be careful to always cut away from yourself when using a knife.
