Lemon powder is made from the peel of a lemon and can be used in place of zest or extract. It is an easy and inexpensive way to make use of discarded lemon peels. Lemon powder can be mixed with sugar to make lemon sugar, with pepper to make lemon pepper or used to flavor tea, cookies or scones. It isn't quite as tangy as zest, but has a slightly sweeter flavor.

Peel the skins off a lemon with a sharp vegetable peeler.

Cut away any white pith remaining on the peels; it is bitter and will affect the flavor.

Arrange the peels skin-side down in a single layer on a plate or baking sheet and leave to dry at room temperature for two to three days. For additional flavor, roast the peels in the oven for 5 to 10 minutes on a low heat.

Grind the lemon peels with a mortar and pestle when they are completely dried (the edges should be curled up).

Tip

Store the lemon powder in a spice jar in the refrigerator.
